Rustic Tomato Soup Recipe

Our garden tomatoes have been very generous this year. And as the weather cools, I’ve been finding myself making this simple, delicious Tomato Soup Recipe on repeat.

Not only is it relatively easy to put together, it’s a crowd pleaser in our house too… meaning myself, my husband and our two small boys enjoy it every time. Better still, our 4 year old loves getting involved and doing all the tomato picking. #winwin

I suggest adding some crispy bacon and serving alongside a loaf of fresh bread or warm focaccia with a dab of butter.

Rustic Garden Tomato Soup

This Rustic Tomato Soup is a hearty and flavourful dish that combines the goodness of fresh garden tomatoes with aromatic herbs and cream. Serve with a thick loaf of bread or homemade focaccia.

Ingredients  

  • 1300 grams tomatoes roughly chopped
  • 1 onion diced
  • 5 cloves of garlic peeled and chopped
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp ground pepper
  • 1/4 cup fresh basil
  • 1/2 cup cream or milk or combination of the two
  • 1/2 cup cheese parmesan or tasty (optional)

Instructions 

  • Preheat oven to 450 F or 235 C. Lightly grease large baking sheet, set aside.
  • Combine chopped tomatoes, onion and garlic into a large bowl and toss with olive oil, salt and pepper. Mix until even.
  • Spread tomato mixture onto prepared baking sheet in a single layer and roast for 25-30 minutes.
  • Pull from oven and allow to cool slightly.
  • Add basil and entire tomato mixture into blender, pulse until it reaches an even consistency.
  • In a large pot, melt butter on low and add flour and sugar. Whisk until dissolved (about 30 seconds).
  • Pour soup from blender into pot, but use a strainer to remove any large tomato skins.
  • Stir the pot, keeping temperature on low to medium, until combined. Add cream, salt and pepper to taste.

Notes

 
Note: Add more cream / milk for a thinner soup or less for a thicker rustic soup. Sprinkle cheese and add a sprig of extra basil to each bowl. Enjoy!
